Purpose of Research
○With growing global awareness of health management, environmental protection, carbon reduction, as well as increased interest in animal protection and welfare, the global vegetarian population and the market size of the vegetarian industry have continuously expanded, with further growth projections dominating future forecasts. In South Korea, the rise in the vegetarian population has led to the introduction of vegetarian food and beverage products, and the number of restaurants offering vegetarian menus to attract customers is increasing. Additionally, vegetarian meals are becoming a regular feature in group and school meal services.
○However, despite this growth, there is no official statistical data available on the vegetarian food industry, and there has been no comprehensive survey to assess the current state of the industry. This gap limits the ability to fully understand the policy demands and consumer needs of stakeholders in the sector.
○Therefore, this study aims to thoroughly analyze the current state and trends across various stakeholders within the vegetarian food industry and provide key development tasks and detailed strategies to foster the industry as a new growth engine for the agri-food sector.
